Bentonite clay is used as a fining agent for wine. It may be added prior to adding the yeast or it may be added approximately 2 weeks prior to bottling. Adding the bentonite before the yeast will help to speed up the fermentation and the clearing. In either case, dissolve the bentonite in luke warm water, then mix thoroughly. Use 1/2 to 1 teaspoon per gallon of must/ wine.
