Gelatin finings are used both by beer and wine makers. Gelatin is positively charges and will attract and settle out suspended yeast. It may be used throughout the brewing process: at the end of the boil, when racking to a secondary fermenter or when bottling or kegging. Use 1/2 teaspoon per gallon of beer or wine. Dissolve in water and add. Do not boil. (Boiling for longer than 10 minutes will cause it to lose its clearing properties.)
