Inhibits bacteria in wine. Used as sanitizer for equipment. Retards yeast growth and oxidation. May leave undesireable aftertaste if dose is too high. Some people are allergic to sulphites.

Instructions:
As sanitizer: use 1 oz per gallon. No rinsing required. To use in wine: mix 4 oz in 1 qt water. Use 1 tsp of this solution per 1 gal wine.
