Roasted, non-malted, barley give the distinctive dark roast, almost burnt flavor to Irish-style dry stouts. Very dark--even a little blackens beer considerably. Also used in other stout styles including imperial stout, and occasionally in tiny amounts to provide color and roast flavor in amber-reddish ales.
