Calcium Sulfate. Used as a water hardener and for pH adjustment in mashing. Accentuates perception of hop bitterness, and in high doses may be perceived as a dry, minerally and slightly acidic background flavor.
Tech Data: Ion composition 23% calcium; 56% sulfate. 1 gm in 1 US gallon = 62 ppm calcium, 148 ppm sulfate; 1 gm in 5 US gallons = 12 ppm calcium, 30 ppm sulfate.
Instructions: Use according to recipe. Usually 1-2 tsp/5 gallons for pale ales, IPAs and bitters; we have used up to 8 tsp/5 gallons for Irish dry stout.
