Chit malt is a very lightly modified malt created by minimally germinating barley at the first stage of the malting process. It's high in alpha amylase, adds grain character and mouthfeel without adding color. Chit malt promotes foam retention for a thick creamy head and helps to promote haze stability desired in beers such as New England IPAs. Like all of Niagara Malt's products it's from grain grown in New York State and the Chit Malt is certified organic.
