The Bourgovin RC 212 strain was selected from fermentations produced in the Burgundy region for its ability to ferment a traditional heavier-style Burgundian Pinot Noir. Low foaming and very low producer of hydrogen sulfide and sulfur dioxide. RC 212 is recommended for red varieties where full extraction is desired. Color stability is maintained throughout fermentation and aging. Aromas of ripe berry and fruit are emphasized while respecting pepper and spicy notes.
Instructions for use:
Dissolve the dry yeast in 10 times its weight (50 ml or 2 oz) of warm NOT HOT water (104-109 deg F/ 40-43 deg C). Let stand 15 minutes without stirring, then stir well to suspend all the yeast. Add to must. Sufficient for 1 to 6 gallons.
